Balsamic Roasted Strawberries w/ whipped Crème Fraiche (Serves 4)
The key to this recipe is the ingredients. Good, ripe strawberries, good balsamic vinegar and good olive oil will make all the difference in the world.
This recipe pairs beautifully with the Clos du Val 2005 Estate Cabernet Sauvignon.
Ingredients
1 pint farm fresh strawberries
½ cup high quality Balsamic Vinegar, plus mor to serve
1 cup crème fraiche
2 tbsp heavy whipping cream
Handful fresh basil, julienned
High quality olive oil to serve
Flakey salt to serve
Directions
Preheat the oven to 425°F. Toss the strawberries in balsamic vinegar and spread on a sheet pan. Roast for 20-25 minutes until soft to the touch but not bursting.
Whip the heavy cream and crème fraiche together until fluffy. Stir in the basil.
To serve, dollop whipped crème fraiche onto a plate, top with roasted strawberries, drizzle with olive oil, balsamic vinegar and a pinch of flakey sea salt.
